Duff Goldman’s Carrot Cake. This recipe is for two 8-inch round cakes. I make 18 cupcakes instead. I cut the reg sugar back to 3/4 c and the brown sugar back to 1/4 c. I also sometimes sub applesauce for some of the oil. I am going to try reducing the amount of oil as well. The baking time is about 20-25 min. These are heavenly with cream cheese icing!!
